WHEN AND HOW DID YOU START WORKING IN THE INDUSTRY?
When I was 18 years old I started working as the trainee club manager at Ministry of Sound.
It was an amazing opportunity to grow and suss out the industry. I travelled all over the world with them which was incredible.
After being with Ministry for about 2.5 years I joined the Boujis team for 10 years where I grew to be Business Development Director for Ignite Group whilst running Boujis on a day to day basis.
AND YOU’VE JUST OPENED ALBERTS, CAN YOU TELL US A BIT MORE ABOUT THAT?
Yes, so Albert’s is Kensington and Chelsea’s newest dinner and dancing private members club. It’s been an unbelievable success so far, really happy with it!
WHAT DO YOU LOVE MOST ABOUT THIS INDUSTRY?
I love the people and I love being on my feet. Not being stuck behind a desk means I have the opportunity to meet an amazing array of people from all different walks of life. It’s so incredibly dynamic!
WHAT ARE THE MOST IMPORTANT TIPS FOR WORKING AT A PRIVATE MEMBERS CLUB?
Appearance is everything! Politeness of course is a big one too.
As a Private Member’s Club it’s incredibly important for our staff to build a real customer profile. Remembering what member’s like to drink, where they like to sit, what food they ordered last time, what shots they ordered last time. You get the idea!
I think having a sense of charisma is hugely important in this industry, especially at a venue like Alberts!
IF YOU COULD GIVE ONE VERY IMPORTANT TIP TO SOMEONE INTERVIEWING TO WORK IN A HIGH-END VENUE, WHAT WOULD IT BE?
Turn up on time and dress nicely! Make sure you have read up about the venue and what the concept is etc. We recently interviewed someone who thought Albert’s was a pub! Not a good start! Knowledge is so important and makes a great first impression.
Never lie on your CV and make sure your have clean nails and fresh breath 😉
WHAT IS MORE IMPORTANT TO YOU IN A CANDIDATE? TRAINING OR PASSION?
I take passion above experience every time! A candidate who is passionate can be moulded and grow into the candidate you really need and want them to be.
WHAT DO YOU LOOK FOR IN A GOOD CANDIDATE FOR YOUR VENUE?
That’s easy! Someone who finds solutions not problems!
WHAT’S YOUR FAVOURITE DISH/DRINK AT ALBERTS?
Definitely the steak tartare that is prepared for guests at the table! We ensure all of our waitstaff are thoroughly trained to do this. Our clients really enjoy that interactive moment.
In terms of drinks, our Espresso Martini trolley is a huge hit! Its wheeled over to the guests table and our mixologists make a cracking martini for you right there!
WHAT TRENDS ARE YOU MOST EXCITED ABOUT IN THE LONDON RESTAURANT/CLUB SCENE AT THE MOMENT?
I love that customers are getting more excited about knowing where their food comes from and that they are genuinely caring more about what they’re eating. Sustainability is a huge issue and its nice to see people taking more notice.
